Vanilla Pudding Cake

Ingredients

  • 1/2 cup unsalted butter, melted and cooled to room temperature
  • 2 cups warm milk
  • 1 1/4 cups powdered sugar, sifted
  • 4 large eggs, separated into yolks and whites
  • 1 tablespoon purified water
  • 1 cup all-purpose flour, sifted
  • 2 teaspoons pure vanilla extract

Instructions

  1. Preheat and Prepare the Pan
    • Preheat your oven to 325°F (163°C).
    • Lightly grease an 8×8-inch baking dish with non-stick baking spray or butter. Set aside.
  2. Beat Egg Whites
    • In a clean bowl, beat the egg whites until stiff peaks form. Set aside.
  3. Mix Egg Yolks and Sugar
    • In another bowl, whisk the egg yolks with the powdered sugar until the mixture turns pale yellow and creamy.
  4. Add Butter and Water
    • Gradually add the melted butter and purified water to the yolk mixture, mixing for about 2 minutes until smooth.
  5. Incorporate Flour
    • Gently fold in the sifted flour until fully combined, ensuring no lumps remain.
  6. Add Milk and Vanilla
    • Slowly pour in the warm milk and vanilla extract, whisking continuously until the batter is smooth and well-mixed.
  7. Fold in Egg Whites
    • Carefully fold the beaten egg whites into the batter in three batches, ensuring they are fully incorporated without deflating the mixture. The batter will be thin and slightly lumpy.
  8. Bake the Cake
    • Pour the batter into the prepared baking dish.
    • Bake in the preheated oven for 40-60 minutes, or until the top is golden brown.
    • If the top browns too quickly, cover it loosely with aluminum foil during the last 10-15 minutes of baking.
