Gooey Butter Bars

  • Yellow cake mix (dry) – 1 box
  • Butter (melted) – 8 tablespoons (1 stick)
  • Egg – 1

For the Gooey Layer

  • Cream cheese (softened) – 8 oz
  • Eggs (beaten) – 2
  • Powdered sugar – 16 oz (about 4 cups)

Directions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking pan with butter or non-stick spray.

Step 2: Prepare the Crust

  1. In a medium bowl, combine the dry cake mix, melted butter, and egg.
  2. Mix until smooth and well-combined.
  3. Pat the dough evenly into the bottom of the prepared baking pan.

Step 3: Make the Gooey Layer

  1. In a large bowl, beat the cream cheese with an electric mixer until smooth.
  2. Add the beaten eggs and mix for about 2 minutes until incorporated.
  3. Gradually add the powdered sugar and beat until the mixture is smooth and well-combined.

Step 4: Assemble

  • Pour the gooey layer evenly over the crust, spreading it out with a spatula if needed.

Step 5: Bake

  • Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center still jiggles slightly.
  • Do not overbake—the gooey layer should remain soft and creamy.

Step 6: Cool and Serve

  1. Let the bars cool completely in the pan.
  2. Cut into squares and serve.
